Compostion: 30% Chardonnay, 60% Piot Noir, 10% Pinot Meunier
Vinyard Sites: Chardonnay-Montgueux, Le Mesnil-sur-Oger, Oger.
Pinot Noir-Montgueux, Le Breuil, Fontaine sur Ay, Vertus.
Pinot Meunier- La Chapelle-Monthodon, Le Breuil
Soil: Clay-limestone over 40-meter thick chalk.
Press: Starfenberger horizontal automatic press.
Aging: 6 months in thermo-regulated stainless steel or resin epoxy tanks then 3 years in bottle at 12 degree Celsius in Le Mesnil-sur-Oger.
Alcohol Content: 12%
Dosage: Brut 1% (6g of sugar/L)
Winemaker Tasting Notes: Its robe is light yellow. Its nose is floral with a bouquet of white fruit (apple, pear and peach). A ripe maturity and freshness at the finish is highlighted by the Chardonnays. A balanced wine for gourmet food lovers.
